Its origins are in America, and it was spread to the rest of the world through Europe in the XVI century.
Nowadays it is the most produced cereal in the world, even more than wheat or rice. For most countries in America it is the historical basis in their feeding culture and the main aspect in Mesoamerican culture.
In Argentina it is used for cooking traditional dishes from the Colonial period such us locro or mazamorra with milk. The locro is often served on May 25th, the anniversary of the May Revolution
